Mini Meatloaves (serves 8)
What You Need:

1 cup water
1/4 cup beef gravy
2 lb. ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
2 eggs, beaten
Instant potatoes
Make It:
PREHEAT oven to 400°F. Prepare Gravy mix or use already prepared gravy if you have on hand. Mix water and gravy in large bowl. Add meat, stuffing mix and eggs; mix lightly.
SHAPE into four oval loaves on foil-covered baking sheet.
BAKE 30 min. or until cooked through (160ºF). Slice and serve with instant potatoes and remaining gray or your favorite vegetables.


Lemon Mustard Roasted Chicken (serves 5)
What You Need:
1/4 cup Dijon Mustard
2 Tbsp. lemon juice
1 Tbsp. olive oil
1 broiler-fryer chicken (3-1/2 lb.)
1/4 tsp. salt
1/8 tsp. pepper
Salad Mix
Make It:

PREHEAT oven to 425°F. Mix mustard, lemon juice and oil in small bowl until well blended.
PLACE chicken on rack of broiler pan or on roasting rack in shallow baking pan; brush with mustard mixture. Season with salt and pepper.
BAKE 40 minutes or until cooked through (180°F).
Serve with Salad.

Cheese & Tater Bake (serves 6)
What You Need:

1 lb. ground beef
1 pkg. (16 oz.) frozen bite-size seasoned potato nuggets
1/2lb Velveeta cut up in small pieces
1 cup Thick 'N Chunky Salsa
Make It:

PREHEAT oven to 425°F. Brown meat; drain. Mix with remaining ingredients.
SPOON into 13x9-inch baking dish.
BAKE 20 minutes or until heated through.
Kitchens Tips:

Substitute 1 lb. boneless skinless chicken breasts, cut into small pieces, for the ground beef. Cook and stir in large nonstick skillet until cooked through. Continue as directed.


Maple-Glazed Stuffed Roast Pork (serves 8)
What You Need:

2 Tbsp. butter
1 apple, chopped
1-1/2 cups hot water
1 pkg. (6 oz.) Stuffing Mix for Chicken
1 pork loin (2 lb), butterflied
2 Tbsp. maple-flavored or pancake syrup
2 Tbsp Hearty Spicy Brown Mustard (Regular brown mustard with work fine)
1 tsp. chopped fresh rosemary
Make It:
HEAT oven to 350ºF.
MELT butter in large skillet on medium heat. Add apples; cook and stir 3 min. or until crisp-tender. Add water and stuffing mix; cover. Let stand 5 min,; mix lightly.
SPOON stuffing mixture onto cut-side of meat to within 1/2 inch of edge. Roll up, jelly-roll fashion, starting at one of the short ends. Place seam-side down, in roasting pan sprayed with cooking spray.
BAKE 1 hour. Mix syrup, mustard and rosemary; spread over meat. Bake 20 min. or until meat is done (160°F). Let stand 15 min. before slicing to serve.
Tips:
  • Cover and refrigerate any leftovers, then use to make sandwiches.
  • Substitute 1/2 cup finely chopped fresh pears for the apples.
  • Have a butcher butterfly the pork loin for you.
Friday Night Bacon Cheeseburger Roll-up (serves 6)
What You Need:
1 lb. lean ground beef
4 slices bacon, chopped
1 small onion, chopped
1/2 lb. (8 oz.) VELVEETA cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust
Salad mix
Make It:
HEAT oven to 400°F. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain. Return meat mixture to skillet. Add VELVEETA; cook until melted, stirring frequently. Cool 10 min.
UNROLL dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle; top with meat mixture. Roll up, starting at one of the long sides. Rearrange if necessary so roll is seam-side down.
BAKE 20 to 25 min. or until golden brown.
Serving Suggestion:
  • Balance this indulgent "cheeseburger" with a mixed green salad and fresh fruit.
  • Serve with your favorite condiments, such as Dill Burger Slices, mustard, ketchup, sliced tomatoes and/or Thick 'N Chunky Salsa.

Thank you for all the comments. It really helps me know what people would like to see on my site.
  • I will start putting my shopping pictures, everyone loves to see those.
  • I will make sure I have one or two slow cooking meals a month. I love my slow cooker but basically I just throw in meat and seasoning and I'm good to go. Check out my other recipes, see my labels tab: Bargain Meals, 1 Trip 1 bag 5 meals you may see a couple more.
  • I will move my advertisements from time to time (gotta make a couple bucks).
  • The blog list I follow are always on my side bar. I look at them everyday and when I see a blog that I think we all would like to see I add it. I look at those blogs everyday so sometimes I don't want to repeat what they already have on their site.
  • I will make sure I put some free items a few times a week. I normally only list the ones I think are worth while. I love free stuff also.
  • I am trying to change the listing of my WinCo foods to list things by aisle, of course your store might be a little different but I'm hoping you can take my list and go down the aisles and find what you need.
  • I would love to have my giveaways. I'm hoping more companies contact me to give away free items.

Meal #1

Herbed Tomatoes, Chicken & rice (serves 4)

What You Need:

1/4 cup KRAFT Light House Italian Dressing Hy-Top $.30
4 small boneless skinless chicken breast halves (1 lb.)$2.18
2 cloves garlic, minced $.10
1 can (28 oz.) diced tomatoes, undrained $.58
1 cup water
2 cups instant brown rice, uncooked Hy-Top $.69
1 cup Shredded Mozzarella Cheese Hy-top $.89
1 fresh tomato, chopped $.44
2 Tbsp. chopped cilantro $.10

Make It:

HEAT dressing in large skillet on medium heat. Add chicken and garlic; cover. Cook 5 min. on each side or until chicken is browned on both sides. Remove chicken from skillet; set aside.

ADD canned tomatoes and water to skillet; stir in rice. Bring to boil; simmer, uncovered, on low heat 10 min. Return chicken to skillet. Top with cheese; cover.

COOK 5 min. or until chicken is done (165ºF); top with remaining ingredients.

Total: 5.28

Meal #2

Slow-cooker Lasagna (Serves 8) this will be for two meals

What You Need:

1 lb. ground beef $ 1.98
1 jar (26 oz.) spaghetti sauce Huntz $.92
1 cup water
1 container (15 oz.) Ricotta Cheese $2.47
1 pkg. (7 oz.) Shredded Mozzarella Cheese, divided Hy-Top $1.37
1/4 cup Grated Parmesan Cheese, divided Hy-top $.25
1 egg $.10
2 Tbsp. chopped fresh parsley $.10
6 lasagna noodles, uncooked Hy-Top $1.38


Make It:

BROWN meat in large skillet; drain. Stir in spaghetti sauce and water. Mix ricotta, 1-1/2 cups mozzarella, 2 Tbsp. Parmesan, egg and parsley.

SPOON 1 cup meat sauce into slow cooker; top with layers of half each of the noodles, broken to fit; and cheese mixture. Cover with 2 cups meat sauce. Top with remaining noodles, broken to fit; cheese mixture and meat sauce. Cover with lid.

COOK on LOW 4 to 6 hours or until liquid is absorbed. Sprinkle with remaining cheeses; let stand, covered, 10 min. or until melted.

Total: $8.57 for 8 or two meals, which is $4.29 for a family of 4

My Albertson's Trip Today

Here is what I purchased today at Albertson's. When I shop Albertson's I only shop the specials, for everyday shopping I shop at WinCo.

For $7.02 with $15 in catalinas - it's a money maker!!!

2 boxes of cereal
2 packages of sugar cookie mix
4 tubs of frosting
2 bags of totinos pizza rolls
2 bags of Chex mix
1 box potato buds
1 box BC potato
2 progresso broth

I used coupons for almost everything, double coupons, and my $15 catalina from the last transaction.

$7.02 OOP, received $15 in catalina and saved $42.52.

1/2 Price Tuesday Gift Certificates

It's 1/2 price Tuesday. For the Tri-Cities people here's a deal for you. Rosy's Diner in Richland- buy a $50 gift certificate for $25. They normally come in 2 $25 certificates. I love this place. I go to lunch there pretty often with my co-worker. Yes, we always use the 1/2 price certificates.
