1 Trip, 1 Bag, 5 Meals Purchased at Safeway for $44.34

This 1 Trip, 1 bag, and 5 meals were purchased at Safeway for $44.34. This trip would be for a family of 4. These recipes will serve a minimum of 4, most of them you should have leftovers.

  • 1 Gravy packet Safeway $.69
  • 1 tube refrigerated pizza crust $3.69
  • 2 lb of Velveeta prepared cheese $5.99 (you only need 1 lb so you will have extra)
  • 1 bag bite size seasoned tator tots - Safeway $2.50
  • 3 1/2 lb whole chicken $6.27
  • 4 lb ground beef $7.16
  • 2 lb pork loin $3.58
  • 16 oz thick and chunky salsa Old El Paso $2.29 - you may have this on hand
  • Fresh rosemary $2.00
  • Bacon - 4 slices (1 lb package) Safeway $2.99 you will have left for breakfast
  • 2 boxes stuffing for chicken - Safeway $1.59 each
  • Salad mix $2.50
  • box of potatoes - Betty Crocker $1.50

This you should have on hand:

Dijon Mustard
Brown Mustard
Butter
Egg
apple
2 onions
lemon juice
water
salt and pepper
maple syrup
olive oil

Mini Meatloaves (serves 8)
What You Need:

1 cup water
1/4 cup beef gravy
2 lb. ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
2 eggs, beaten
Instant potatoes
Make It:
PREHEAT oven to 400°F. Prepare Gravy mix or use already prepared gravy if you have on hand. Mix water and gravy in large bowl. Add meat, stuffing mix and eggs; mix lightly.
SHAPE into four oval loaves on foil-covered baking sheet.
BAKE 30 min. or until cooked through (160ºF). Slice and serve with instant potatoes and remaining gray or your favorite vegetables.


Lemon Mustard Roasted Chicken (serves 5)
What You Need:
1/4 cup Dijon Mustard
2 Tbsp. lemon juice
1 Tbsp. olive oil
1 broiler-fryer chicken (3-1/2 lb.)
1/4 tsp. salt
1/8 tsp. pepper
Salad Mix
Make It:

PREHEAT oven to 425°F. Mix mustard, lemon juice and oil in small bowl until well blended.
PLACE chicken on rack of broiler pan or on roasting rack in shallow baking pan; brush with mustard mixture. Season with salt and pepper.
BAKE 40 minutes or until cooked through (180°F).
Serve with Salad.

Cheese & Tater Bake (serves 6)
What You Need:

1 lb. ground beef
1 pkg. (16 oz.) frozen bite-size seasoned potato nuggets
1/2lb Velveeta cut up in small pieces
1 cup Thick 'N Chunky Salsa
Make It:

PREHEAT oven to 425°F. Brown meat; drain. Mix with remaining ingredients.
SPOON into 13x9-inch baking dish.
BAKE 20 minutes or until heated through.
Kitchens Tips:

Substitute 1 lb. boneless skinless chicken breasts, cut into small pieces, for the ground beef. Cook and stir in large nonstick skillet until cooked through. Continue as directed.


Maple-Glazed Stuffed Roast Pork (serves 8)
What You Need:

2 Tbsp. butter
1 apple, chopped
1-1/2 cups hot water
1 pkg. (6 oz.) Stuffing Mix for Chicken
1 pork loin (2 lb), butterflied
2 Tbsp. maple-flavored or pancake syrup
2 Tbsp Hearty Spicy Brown Mustard (Regular brown mustard with work fine)
1 tsp. chopped fresh rosemary
Make It:
HEAT oven to 350ºF.
MELT butter in large skillet on medium heat. Add apples; cook and stir 3 min. or until crisp-tender. Add water and stuffing mix; cover. Let stand 5 min,; mix lightly.
SPOON stuffing mixture onto cut-side of meat to within 1/2 inch of edge. Roll up, jelly-roll fashion, starting at one of the short ends. Place seam-side down, in roasting pan sprayed with cooking spray.
BAKE 1 hour. Mix syrup, mustard and rosemary; spread over meat. Bake 20 min. or until meat is done (160°F). Let stand 15 min. before slicing to serve.
Tips:
  • Cover and refrigerate any leftovers, then use to make sandwiches.
  • Substitute 1/2 cup finely chopped fresh pears for the apples.
  • Have a butcher butterfly the pork loin for you.
Friday Night Bacon Cheeseburger Roll-up (serves 6)
What You Need:
1 lb. lean ground beef
4 slices bacon, chopped
1 small onion, chopped
1/2 lb. (8 oz.) VELVEETA cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust
Salad mix
Make It:
HEAT oven to 400°F. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain. Return meat mixture to skillet. Add VELVEETA; cook until melted, stirring frequently. Cool 10 min.
UNROLL dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle; top with meat mixture. Roll up, starting at one of the long sides. Rearrange if necessary so roll is seam-side down.
BAKE 20 to 25 min. or until golden brown.
Serving Suggestion:
  • Balance this indulgent "cheeseburger" with a mixed green salad and fresh fruit.
  • Serve with your favorite condiments, such as Dill Burger Slices, mustard, ketchup, sliced tomatoes and/or Thick 'N Chunky Salsa.
