Thanksgiving Leftover Recipe

Turkey Mashed Potato and Jack Cheese Casserole (serves 4)

Ingredients:

3 cups scraps, bite-size pieces, or slices skinned cooked turkey
1 cup turkey gravy
2 cups mashed potatoes
1 cup (1/4 lb.) shredded Jack Cheese
Salt and pepper

1.Butter a shallow 1 1/2-quart casserole. Cover bottom evenly with turkey. Drizzle 3/4 cup gravy (hot or cold, stirred to soften) over the meat. Stir potatoes to soften, mound onto turkey, and swirl to cover surface of meat. Drizzle remaining 1/4 cup gravy over potatoes, then sprinkle evenly with cheese.

2.Bake in a 450° oven until turkey and potatoes are hot in the center (about 140°), 10 to 15 minutes. If desired, broil 4 to 6 in. from heat until cheese is lightly browned, 2 to 3 minutes. Season portions with salt and pepper to taste.

Celebrate Thanksgiving by Shopping Safeway


Thank you to Safeway for the $25 gift certificate and giving me the opportunity to share with you the great things that are happening at Safeway.

I purchased everything I need for Thanksgiving for less than $35, thanks to their new low prices. Here's what I bought:

I wanted to show you this great Turkey recipe I have been making for the past couple of years. This Soy Sauce marinate makes the turkey so moist. Safeway has it posted on Safeways Thanksgiving meal planning. I was surprised when I seen it. It is so good.

Yoke's Fresh Market and Walgreen's Trip on Saturday

I didn't take pictures but I wanted to post my shopping trip real quick. I thought I did pretty well and I wanted to share.

Walgreen's I purchased the Almay Pure Blends makeup on sale for $9.99, I used a $2 RR. Total price $8.82 and I received a $10 RR, not too bad.

Yoke's Fresh Market:
Our house lives on Tillamook Ice Cream and they have it on sale for $2.99, lowest price you will see.

I purchased:
2 gallons of ice cream
6 lbs of the boneless skinless pork chops
Harvati Cheese that was on sale

Total $16.00 and saved $19.25. Saving more than 1/2 always makes me happy.

Meal #1
Pork Chops with Apples and Stuffing (Serves 6)

Ingredients:

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken $.78
1 can (21 oz.) apple pie filling $1.98
6 boneless pork loin chops (1-1/2 lb.), 3/4 inch thick $2.97

HEAT oven to 375ºF.

PREPARE stuffing as directed on package.

SPREAD pie filling onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with chops and stuffing. Cover with foil.

BAKE 40 min. or until chops are done (160ºF), removing foil after 30 min.
(You can substitute 6 boneless skinless chicken breast halves)

Total $5.73 serves 6, so for a family of 4 it will be $3.82. For $5 you can feed your family of 4 and have leftovers.

Meal #2
A1 Meatloaf (serves 8)

Ingredients:
1 can (8 oz.) tomato sauce, divided. Hy-Top $.27
2 lb. ground beef $3.96
1 onion, chopped $.54
1 cup fresh bread crumbs (on hand)
1/3 cup A.1. Original Steak Sauce $.99
2 eggs, beaten $.20
1/2 tsp. ground black pepper

HEAT oven to 350°F.

RESERVE half the tomato sauce. Mix remaining tomato sauce with remaining ingredients.

PRESS meat mixture into 9x5-inch loaf pan.

BAKE 1 hour or until done (160ºF), draining fat and topping meatloaf with reserved sauce after 50 min.

Total $5.90 for 8, for a family of 4 that would be $2.95.

You still have money left to add a spinach salad and a hot steamed green vegetable. Special Extra Add 1 small green pepper, chopped, to meat mixture before pressing into pan.

Lowe's Build and Grow Workshop

Saturday Nov. 21st go to Lowe's and build a snowman from 10:00 to 11:00. Sign up prior to going to make sure you get your snowman. We always sign up on the Friday.

After building a snowman go to Craft Warehouse at 1:00 and make a Christmas Ornament for $1 each. Make sure you pay first before getting in line. The line moves pretty fast. I have been taking the kids each week. It's a fun, cheap Saturday.

Total OOP $2.39 and saved $41.61. Not too bad.

My Fiesta Foods Trip




I don't shop at Fiesta Foods very often because it's not very close to my house; but for the Thanskgiving meal pack I normally pick up one or two a year. Here is my shopping trip:

Dijon Mustard
Brown Mustard
Butter
Egg
apple
2 onions
lemon juice
water
salt and pepper
maple syrup
olive oil

Mini Meatloaves (serves 8)
What You Need:

1 cup water
1/4 cup beef gravy
2 lb. ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
2 eggs, beaten
Instant potatoes
Make It:
PREHEAT oven to 400°F. Prepare Gravy mix or use already prepared gravy if you have on hand. Mix water and gravy in large bowl. Add meat, stuffing mix and eggs; mix lightly.
SHAPE into four oval loaves on foil-covered baking sheet.
BAKE 30 min. or until cooked through (160ºF). Slice and serve with instant potatoes and remaining gray or your favorite vegetables.


Lemon Mustard Roasted Chicken (serves 5)
What You Need:
1/4 cup Dijon Mustard
2 Tbsp. lemon juice
1 Tbsp. olive oil
1 broiler-fryer chicken (3-1/2 lb.)
1/4 tsp. salt
1/8 tsp. pepper
Salad Mix
Make It:

PREHEAT oven to 425°F. Mix mustard, lemon juice and oil in small bowl until well blended.
PLACE chicken on rack of broiler pan or on roasting rack in shallow baking pan; brush with mustard mixture. Season with salt and pepper.
BAKE 40 minutes or until cooked through (180°F).
Serve with Salad.

Cheese & Tater Bake (serves 6)
What You Need:

1 lb. ground beef
1 pkg. (16 oz.) frozen bite-size seasoned potato nuggets
1/2lb Velveeta cut up in small pieces
1 cup Thick 'N Chunky Salsa
Make It:

PREHEAT oven to 425°F. Brown meat; drain. Mix with remaining ingredients.
SPOON into 13x9-inch baking dish.
BAKE 20 minutes or until heated through.
Kitchens Tips:

Substitute 1 lb. boneless skinless chicken breasts, cut into small pieces, for the ground beef. Cook and stir in large nonstick skillet until cooked through. Continue as directed.


Maple-Glazed Stuffed Roast Pork (serves 8)
What You Need:

2 Tbsp. butter
1 apple, chopped
1-1/2 cups hot water
1 pkg. (6 oz.) Stuffing Mix for Chicken
1 pork loin (2 lb), butterflied
2 Tbsp. maple-flavored or pancake syrup
2 Tbsp Hearty Spicy Brown Mustard (Regular brown mustard with work fine)
1 tsp. chopped fresh rosemary
Make It:
HEAT oven to 350ºF.
MELT butter in large skillet on medium heat. Add apples; cook and stir 3 min. or until crisp-tender. Add water and stuffing mix; cover. Let stand 5 min,; mix lightly.
SPOON stuffing mixture onto cut-side of meat to within 1/2 inch of edge. Roll up, jelly-roll fashion, starting at one of the short ends. Place seam-side down, in roasting pan sprayed with cooking spray.
BAKE 1 hour. Mix syrup, mustard and rosemary; spread over meat. Bake 20 min. or until meat is done (160°F). Let stand 15 min. before slicing to serve.
Tips:
  • Cover and refrigerate any leftovers, then use to make sandwiches.
  • Substitute 1/2 cup finely chopped fresh pears for the apples.
  • Have a butcher butterfly the pork loin for you.
Friday Night Bacon Cheeseburger Roll-up (serves 6)
What You Need:
1 lb. lean ground beef
4 slices bacon, chopped
1 small onion, chopped
1/2 lb. (8 oz.) VELVEETA cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust
Salad mix
Make It:
HEAT oven to 400°F. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain. Return meat mixture to skillet. Add VELVEETA; cook until melted, stirring frequently. Cool 10 min.
UNROLL dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle; top with meat mixture. Roll up, starting at one of the long sides. Rearrange if necessary so roll is seam-side down.
BAKE 20 to 25 min. or until golden brown.
Serving Suggestion:
  • Balance this indulgent "cheeseburger" with a mixed green salad and fresh fruit.
  • Serve with your favorite condiments, such as Dill Burger Slices, mustard, ketchup, sliced tomatoes and/or Thick 'N Chunky Salsa.
