$5 Meals for a family of 4, items purchased at WinCo Foods

I am happy to participate in the $5dollar dinners Bargain Meal of the Week.

Meal #1
Taco Chicken (serves 4)


Ingredients:
1 lb Boneless Skinless Chicken Breast $2.18lb
1 package taco seasoning (Lawry's) $.42
2 cans Cream of Chicken Soup $.68 each
1 cup sour cream (Darigold) $.66
1lb noodles of your choice $.92

Put chicken in the crock pot. Mix soup and taco seasoning and pour over chicken. Cook on low for 6 hours. Remove chicken and cut up into chunks. Mix in sour cream and serve over rice or noodles.

Meal #2
Apricot Ginger Glazed Chicken (serves 4)

Ingredients:

1 lb boneless skinless chicken breast $2.18
1 7.2oz Rice A Roni Rice Pilaft $.98
16oz frozen Broccoli (Hy-Top) $1.38
1/2 cup apricot jam (Hy-Top) $.43
Items on hand ($.50):
2 tsp Dijon Mustard
1/2 tsp ground ginger
2 tbs butter

In large skillet over medium heat, melt 1 tablespoon margarine. Add chicken; cook 5 minutes on each side or until browned. Remove from skillet; set aside.

In same skillet over medium heat, saute rice-pasta mix with remaining 1 tablespoon margarine until pasta is golden brown. Slowly stir in 2 cups water and Special Seasonings; bring to a boil. Reduce heat to low. Cover; simmer 10 minutes.

Stir in broccoli. Place chicken over rice; return to a simmer. Cover; simmer 5 to 10 minutes or until rice is tender and chicken is no longer pink inside.

In small bowl, blend jam, mustard and ginger. Spoon 1 tablespoon glaze over each chicken breast and drizzle remaining glaze over rice. Cover; let stand 3 minutes before servings.
