WinCo $5 Bargain Meals - all ingredients purchased at WinCo Foods

Almond Bacon Chicken
(serves 4)

Ingredients:

  • 4 bacon strips $.50
  • 4 boneless skinless chicken breast halves (4 ounces each) $1.79
  • 1/4 teaspoon pepper
  • 1 can (10-3/4 ounces) condensed cream of Chicken and Herb (recipes call for cream of onion soup but WinCo doesn't carry it) $1.26
  • 1/4 cup chicken broth $.40
  • 1/4 cup sliced almonds, toasted (bulk section) $.40

Directions (this recipe was originally a microwave recipe, I don't cook from the microwave so I put in my oven version as well as the microwave notes.

  • In a microwave, cook bacon on paper towels on high for 1 to 2-1/2 minutes or until partially cooked.
  • Wrap a bacon strip around each chicken breast. Sprinkle with pepper.
    Place in an oven about 350 degrees for 20 to 30 minutes (or in the microwave for 5 1/2 minutes).
  • In a large bowl, combine soup and broth; cover and heat (microwave for 1-1/2 minutes). Spoon around chicken. Cook, uncovered, for about 10-15 minutes (3-6 minutes longer in microwave) or until juices run clear. Let stand for 5 minutes before serving. Sprinkle with almonds. Yield: 4 servings.

Total $4.35 adding the pasta for additional $.85 = $5.20
