$5 Meals for a Family of 4 - Purchased at WinCo Foods

WinCo $5 Bargain Meals - all ingredients purchased at WinCo Foods

Meal #1 Stuffed Bell Peppers (serves 4)

Ingredients:
1 package (4.2 oz) Rice-A-Roni® Nature’s Way™ Long Grain & Wild Rice or Rice Pilaf $.98
2 large green bell peppers $.78 each
1/2 pound ground beef $.99
1/2 cup corn kernels (fresh, frozen or canned) $.15 ($.58 for a can)
1 cup salsa (mild, medium or hot) $.94 (Pace 1 bottle $1.88)
1/2 cup shredded low-fat cheddar cheese $.40 ($1.58 2 cups)


Preheat oven to 375°F.
Prepare Nature’s Way Long Grain & Wild Rice Rice-A-Roni according to package directions.
Meanwhile, cut peppers in half lengthwise; remove seeds, wash and drain. Place peppers in baking dish. Bake uncovered 12 to 15 minutes or until soft. Remove from oven.
In medium skillet over medium heat, cook ground beef about 10 minutes, stirring occasionally, until no pink remains. Drain fat, if necessary.
In large bowl, combine corn, salsa and cooked beef. Add cooked rice; mix well.
Spoon rice mixture evenly into each of pepper halves. Top each evenly with cheese. Return to oven 10 to 12 minutes or until heated through and cheese is melted.

Meal #2 Sloppy Joe Casserole (serves 4)


Ingredients:
1lb ground beef $1.98
1/2 cup sliced green onions (8 medium) $.29
1 can (15.5 oz) sloppy joe sauce $.98
1 can (11 oz) Green Giant® Mexicorn® whole kernel corn with red and green peppers, undrained $1.08
1 can (6 oz) Pillsbury refrigerated flaky biscuits (5 biscuits) $1.38


Heat oven to 375°F. In 12-inch skillet, cook ground beef and onions over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
Stir in sloppy joe sauce and corn. Cook 2 to 3 minutes, stirring occasionally, until thoroughly heated. Spoon mixture into ungreased 1- to 1 1/2-quart casserole.
Separate dough into 5 biscuits; cut each in half. Arrange, cut side down, around outside edge of hot mixture with sides of biscuits touching.
Bake uncovered 15 to 20 minutes or until biscuits are deep golden brown.
