I am happy to participate in the $5dollar dinners Bargain Meal of the Week.
Ingredients were all purchased at WinCo Foods (Thursday August 6th)
Lemon Broccoli Chicken
1 lemon $.35
1 tablespoon veg oil $.20
4 skinless boneless chicken breast about 1 lb $2.18
1 can Campbell's cream of broccoli soup $1.26
1/4 milk $.10
1/8 teaspoon pepper
Cut 4 thin slices of lemon and set aside. Squeeze 2 teaspoons juice from remaining lemon and ser aside.
In medium skillet over med-high heat, heat oil. Add chicken and cook 10 minutes or until browned. Set chicken aside. Pour off fat.
Add soup, milk, reserved lemon juice and pepper. Heat to a boil. return chicken to pan. Top with lemon slices. Reduce heat to low. Cover and cook 5 minutes or until chicken is no longer pink.
Serve with Garlic and Olive Oil Vermicelli Pasta Roni $.98
1 can Campbell's Cream of Chicken Soup $.97
1/2 milk $.20
4 Skinless Boneless Chicken Breast about 1lb $2.18
2 tablespoons all-purpose flour $.10
1 1/2 cups Pepperidge Farm Herb Stuffing finely crushed $.84 ($1.68 for the whole box)
2 tablespoons of butter $.15
Mix 1/3 cup soup and 1/4 cup milk in shallow dish. Lightly coat chicken with flour. Dip into soup mixture. Coat with stuffing.
Place chicken on baking sheet. Drizzle with butter. Bake at 400 degrees for 20 minutes or until chicken is no longer pink.
In small saucepan mix remaining soup and remaining milk. Over med. heat, heat through. Serve with chicken.
Serve with instant Hungry Jack Potatoes $.88
