$5 meals for a family of 4 purchased at WinCo Foods

I am happy to participate in the $5dollar dinners Bargain Meal of the Week.

Ingredients were all purchased at WinCo Foods (Thursday July 16th)

Meal #1
Rice a Roni Creamy Baked Chicken and Rice

Ingredients:
1 Rice-A-Roni Chicken Flavor $.98
2 tablespoons of butter $.15
1lb of boneless skinless chicken breast ($1.98) cut in 3/4 inch chunks
1 can cream of cream of chicken soup (generic brand) $.74
3 tbs white cooking wine $.15
2 cups broccoli florets $.46
1 cup shredded swiss cheese $.76 ($2.98 lb)
1/2 cup seasoned bread crumbs ($.15)
2 1/2 cups of water

Preheat oven to 400 degrees. Combine rice mix, chicken, and butter in large oven proof skillet (or cover the handle with two layers of aluminum foil to oven proof). Saute until rice is golden brown and chicken is no longer pink inside. Add 1 1/2 cups of water, special seasonings, wine and cream of chicken soup. Stir well until soup is blended. Bring to a boil. Lower heat, cover and simmer for 10 minutes. Add broccoli to skillet. Cover and simmer 10 more minutes or until rice is tender. Sprinkle swiss cheese over rice, chicken and soup mixture. Top with bread crumbs. Bake uncovered in skillet in oven for 10 minutes.

Meal #2
Easy Potato Hamburger Casserole

Ingredients:
3 potatoes, sliced thin $.10 (10lb bag is $1.98)
1 lb hamburger $1.98 (used 30%)
1 small onion $.26
1/4 tsp garlic salt
1 (16oz) can green beans, drained $.55
1 can cream of celery soup (generic brand) $.74
1/2 can milk $.17
4 oz grated cheddar cheese $.74

Put sliced potatoes in bottom of greased casserole dish. Brown hamburger and onion, then drain. Put on top of potatoes. Add garlic salt. Next add green beans. Mix celery soup and 1/2 can of milk and pour over beans. Top with grated cheese. Bake, uncovered, in 350 degree oven for 45 minutes. Put lid on last 10 minutes of baking.

Total $4.54 Add $.98 Betty Crocker Brownie Mix, bake and serve for dessert for a total $5.52
