Chicken with Cucumber Sauce

  Chicken with Cucumber Sauce

Serves 4

4 skinless, boneless chicken breast halves (1 to 1 1/4 pounds total) (I normally pick these up for about $1.99lb)
1/8 teaspoon black pepper (on hand)
Fresh mint leaves (optional)

Cucumber Sauce:
3/4 cup Yoplait® Fat Free Plain Yogurt ($.50)
1/4 cup thinly sliced green onions ($.15)
2 teaspoons snipped fresh mint or 1/2 teaspoon dried mint, crushed
1/2 teaspoon ground cumin (on hand)
1/4 teaspoon salt (on hand)
1 cup chopped, seeded cucumber ($.50)
1/8 teaspoon black pepper (on hand)

1. In a medium bowl combine yogurt, green onions, snipped or dried mint, cumin, salt, and 1/8 teaspoon pepper. Transfer half of the yogurt mixture to a small bowl; set aside. For cucumber-yogurt sauce, stir cucumber into remaining yogurt mixture.

2. Sprinkle chicken breasts with 1/8 teaspoon pepper.

3. Place chicken on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 6 minutes. Turn chicken. Broil for 6 to 9 minutes more or until chicken is tender and no longer pink, brushing chicken with reserved yogurt mixture during the last half of broiling.

4. Serve chicken with the cucumber-yogurt sauce. If desired, garnish with fresh mint.

Total $3.14, add a nice salad and you have a great low budget meal.

Spicy Skillet Chicken

Serves 4

1 to 2 teaspoons chili powder (on hand)

1/2 teaspoon salt (on hand)
1/4 teaspoon pepper (on hand)
4 boneless skinless chicken breasts (about 1 1/4 lb) ($2.78)
1 tablespoon vegetable oil (on hand)
1 can (15 oz) black beans, drained, rinsed (S&W $.68)
1 can (11 oz) Green Giant® Mexicorn® whole kernel corn with red and green peppers, undrained ($1.08)
1/3 cup chunky salsa ($.65)
2 cups hot cooked rice(~$.50)

In small bowl, mix chili powder, salt and pepper; sprinkle evenly over both sides of chicken breasts.

In 10-inch nonstick skillet, heat oil over medium heat. Add chicken; cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).

Stir in beans, corn and salsa. Heat to boiling. Reduce heat. Cover and simmer 3 to 5 minutes or until vegetables are hot. Serve with rice.

Total Cost $5.69

Turn Coupons into Money

Do people realize that coupons can be turned into money? If you don't believe in coupons give this a try - it will change your mind. Go to the store and save $10 in coupons/savings/store promotions (on things you normally buy), hit the $10 cash back button when using your debt card. You just changed those coupons into cash. I treat myself once in awhile by paying myself the coupon savings. I don't feel guilty about hitting the cash back button (of course you wouldn't want to make that a habit).
