Meal #1
Taco Chicken (serves 4)

Ingredients:
1 lb Boneless Skinless Chicken Breast $2.18lb
1 package taco seasoning (Lawry's) $.42
2 cans Cream of Chicken Soup $.68 each
1 cup sour cream (Darigold) $.66
1lb noodles of your choice $.92

Put chicken in the crock pot. Mix soup and taco seasoning and pour over chicken. Cook on low for 6 hours. Remove chicken and cut up into chunks. Mix in sour cream and serve over rice or noodles.

Total $5.54

Meal #2
Apricot Ginger Glazed Chicken (serves 4)

Ingredients:

1 lb boneless skinless chicken breast $2.18
1 7.2oz Rice A Roni Rice Pilaft $.98
16oz frozen Broccoli (Hy-Top) $1.38
1/2 cup apricot jam (Hy-Top) $.43
Items on hand ($.50):
2 tsp Dijon Mustard
1/2 tsp ground ginger
2 tbs butter

In large skillet over medium heat, melt 1 tablespoon margarine. Add chicken; cook 5 minutes on each side or until browned. Remove from skillet; set aside.

In same skillet over medium heat, saute rice-pasta mix with remaining 1 tablespoon margarine until pasta is golden brown. Slowly stir in 2 cups water and Special Seasonings; bring to a boil. Reduce heat to low. Cover; simmer 10 minutes.

Stir in broccoli. Place chicken over rice; return to a simmer. Cover; simmer 5 to 10 minutes or until rice is tender and chicken is no longer pink inside.

In small bowl, blend jam, mustard and ginger. Spoon 1 tablespoon glaze over each chicken breast and drizzle remaining glaze over rice. Cover; let stand 3 minutes before servings.

Serves 4


Ingredients:
1 lb. ground beef $1.98
1/2 cup finely chopped onions $.27
2 cloves garlic, minced $.15
1 tsp. dried oregano leaves
1 tsp. crushed red pepper
8 Flour Tortillas (Tia Rosa) $1.98 for a 10ct
6 oz. VELVEETA Pasteurized Prepared Cheese Product, cut into 8 slices $.84 ($4.34 for 32oz)
2 cups oil (you should have on hand)
1/4 cup Sour Cream $.20
1/4 cup finely chopped fresh cilantro $.25 ($.54 for a bunch)

Prepare
Brown meat in large skillet on medium-high heat; drain. Add onions, garlic, oregano and pepper; mix well. Cook until onions are tender, stirring occasionally; drain.

Place 1/4 cup meat mixture onto center of each tortilla; top with VELVEETA. Fold in all sides of tortillas to completely enclose filling; secure with wooden toothpicks. Place in single layer on baking sheet; cover. Refrigerate 20 min.

HEAT oil in large saucepan on medium-high heat. Add tortilla pouches, 2 at a time; cook 5 min. or until golden brown. Drain. Remove toothpicks. Serve topped with sour cream and cilantro.

Cheesy Chicken Pot Pie

Serves 8

Ingredients
3 cups chopped cooked chicken 1 pkg. $2.18
(16 oz.) frozen vegetable blend, thawed, drained (Flav-R-Pak) $.98
8 oz VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes $1.12
1 can (10-3/4 oz.) reduced-sodium condensed cream of chicken soup $.97
1 can (8 oz.) refrigerated crescent dinner rolls $1.56 (Pillsbury - use your coupon)

Prepare
HEAT oven to 375ºF.

COMBINE first 4 ingredients in 13x9-inch baking dish.

UNROLL dough; place over chicken mixture.

BAKE 20 to 25 min. or until crust is golden brown.

Total $6.81 for 8 people, that makes it $3.40 for a family of 4 with left overs for lunch or dinner the next night.

Albertson's Doubles - Use them today

If you haven't used your double coupons that came in Sunday's paper, you need to use them today. General Mills granola bars, cereal, and fruit snacks are $1.75 if you buy 4. There are several coupons for Fiber One, Nature Valley, and the cereal, that you can use with your double coupons.

While you are there pick up a couple pounds of the boneless skinless chicken breast for $1.79lb, this is the lowest I have seen it in a long time. Stock up and freeze.
