sesame garlic chicken
Weight Watchers Baked Sesame Ginger Chicken from Skinny Kitchen

Prep Time: 15 minutes
Bake Time: 30 minutes

Ingredients for Chicken:


4 (4 ounces each) chicken breast, boneless, skinless
1 cup regular onions (yellow), chopped
¼ cup reduced-sodium soy sauce
2 tablespoons fresh orange juice
2 tablespoons hoisin sauce, see shopping tips
1 tablespoon brown sugar
2-3 packets Truvia, Stevia or Splenda (sugar substitute), to taste
1 tablespoon ginger, from a jar, see shopping tips
1 teaspoon minced garlic
1 tablespoon cornstarch or flour

Ingredients for Serving:

1 bag shredded cabbage (~5 cups)
2 teaspoons sesame seeds
2 tablespoons scallions, sliced

Instructions

1. Preheat oven to 350. Coat a 9 x 9 inch baking dish with cooking spray.
2. Place chicken in dish. Sprinkle onions all over. Combine soy sauce and next 5 ingredients (through garlic); pour over chicken.
3. Cover with foil and bake for about 30 minutes. Check for doneness.
4. Pour sauce in small pot. In a small dish, mix the cornstarch with a little water to dissolve. If using flour, not necessary. Whisk it into the sauce. Bring heat up to a boil, turn down to low and simmer for a few minutes until the sauce thickens a bit. Pour sauce over chicken.
5. Add cabbage to a microwave safe bowl and cook in microwave for 2-3 minutes until soft.
6. To serve: Divide cabbage on 4 plates. Add 1 breast and spoon sauce over the top of chicken and cabbage. Sprinkle the top of each serving with ½ teaspoon sesame seeds and sliced scallions.

Makes 4 servings (each serving, 1 chicken breast and sauce)

Slow Cooker Chicken Parmesan - Budget Meal

Slow Cooker Chicken Parmesan with Penne Pasta

Great Budget Meal! Stock up on boneless skinless chicken breast when they are less than $2.00 a pound, your pasta sauce and pasta when you see it less than a dollar.


1 egg
1/3 cup Progresso® plain bread crumbs
1/3 cup shredded Parmesan cheese
1/2 teaspoon Italian seasoning 1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 jar (26 oz) tomato pasta sauce
1/2 cup shredded Italian cheese blend (2 oz)
2 2/3 cups uncooked penne pasta (8 oz)

1. Spray 2- to 3-quart slow cooker with cooking spray.

2. In small shallow bowl, beat egg until foamy. In separate shallow bowl, mix bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper. Dip chicken into egg, then coat evenly with bread crumb mixture; place in cooker. Spread pasta sauce evenly over chicken.

3. Cover; cook on Low heat setting 5 to 6 hours.

4. Sprinkle Italian cheese blend over top. Cover; cook on Low heat setting 10 minutes longer

. Meanwhile, cook and drain pasta as directed on package. Serve chicken with pasta.

Chicken Feta

Chicken Feta
Serves 4

Here is a great low budget recipe from Eat Better America. Add a spinach salad and you are good to go.

4 boneless skinless chicken breasts (about 1 1/4 lb)
2 tablespoons balsamic vinaigrette dressing
1 teaspoon Italian seasoning
1/4 teaspoon seasoned pepper blend
1 large plum (Roma) tomato, cut into 8 slices
1/4 cup crumbled feta cheese (1 oz)

Set oven control to broil. Brush both sides of chicken breasts with dressing. Sprinkle both sides with Italian seasoning and seasoned pepper. Place on rack in broiler pan.

Broil with tops 4 inches from heat about 10 minutes, turning once, until chicken is no longer pink when centers of thickest pieces are cut. Top with tomato and cheese. Broil 2 to 3 minutes longer or until cheese is lightly browned.

High Altitude (3500-6500 ft): Broil chicken about 15 minutes. Top with tomato and cheese. Broil 1 to 2 minutes longer.

Easy Vegetable Pie -Bargain Meal

Easy Vegetable Pie
Serves 6

 2    cups chopped broccoli or sliced fresh cauliflowerets
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1    cup shredded Cheddar cheese (4 ounces)
1/2  cup Original Bisquick® mix
1     cup milk
1/2  teaspoon salt
1/4  teaspoon pepper
2   eggs

   1. Heat oven to 400ºF. Grease 9-inch pie plate. Heat 1 inch salted water to boiling in medium saucepan. Add broccoli; cover and heat to boiling. Cook about 5 minutes or until almost tender; drain thoroughly. Stir together cooked broccoli, onion, bell pepper and cheese in pie plate.

   2.Stir remaining ingredients until blended. Pour into pie plate.

   3. Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.

This should cost you less than $3.00. Most of it you probably have on hand.

Parmesan and Romano Beef
Serves 4

This is a nice quick meal when you are in a hurry.

1 package RICE-A-RONI® Nature's Way ™ Parmesan and Romano ($.98)
1 pound ground beef or turkey ($1.98 beef)
1 tablespoon olive oil (on hand)
1 1/4 cups water (on hand)
1/2 cup milk (on hand)
1 cup frozen peas (optional) (I don't like peas but if you choose to use about a cup it would be about $.50)
1 minced garlic clove (optional) (on hand)

1. In medium saucepan, cook 1 lb. ground beef or turkey until no longer pink; drain.

2. Stir in rice, 1 1/4 cups water and 1 Tbsp. olive oil; bring to a boil.

3. Cover, reduce heat to low and simmer 22-28 min. or until rice is tender and most of water is absorbed.

4. Stir in 1/2 cup milk and Special Seasonings. Return to a boil; stir and cook 1-2 min. or until most of liquid is absorbed. Cover and let stand 3-5 min. before serving.

Total price is $3.46 you can purchase a bag of mixed salad for $.98 to add to your meal.

Chicken with Cucumber Sauce


  Chicken with Cucumber Sauce
Serves 4

4 skinless, boneless chicken breast halves (1 to 1 1/4 pounds total) (I normally pick these up for about $1.99lb)
1/8 teaspoon black pepper (on hand)
Fresh mint leaves (optional)

Cucumber Sauce:
3/4 cup Yoplait® Fat Free Plain Yogurt ($.50)
1/4 cup thinly sliced green onions ($.15)
2 teaspoons snipped fresh mint or 1/2 teaspoon dried mint, crushed
1/2 teaspoon ground cumin (on hand)
1/4 teaspoon salt (on hand)
1 cup chopped, seeded cucumber ($.50)
1/8 teaspoon black pepper (on hand)

1. In a medium bowl combine yogurt, green onions, snipped or dried mint, cumin, salt, and 1/8 teaspoon pepper. Transfer half of the yogurt mixture to a small bowl; set aside. For cucumber-yogurt sauce, stir cucumber into remaining yogurt mixture.

2. Sprinkle chicken breasts with 1/8 teaspoon pepper.

3. Place chicken on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 6 minutes. Turn chicken. Broil for 6 to 9 minutes more or until chicken is tender and no longer pink, brushing chicken with reserved yogurt mixture during the last half of broiling.

4. Serve chicken with the cucumber-yogurt sauce. If desired, garnish with fresh mint.

Total $3.14, add a nice salad and you have a great low budget meal.

Spicy Skillet Chicken
Serves 4

1 to 2 teaspoons chili powder (on hand)
1/2 teaspoon salt (on hand)
1/4 teaspoon pepper (on hand)
4 boneless skinless chicken breasts (about 1 1/4 lb) ($2.78)
1 tablespoon vegetable oil (on hand)
1 can (15 oz) black beans, drained, rinsed (S&W $.68)
1 can (11 oz) Green Giant® Mexicorn® whole kernel corn with red and green peppers, undrained ($1.08)
1/3 cup chunky salsa ($.65)
2 cups hot cooked rice(~$.50)

In small bowl, mix chili powder, salt and pepper; sprinkle evenly over both sides of chicken breasts.

In 10-inch nonstick skillet, heat oil over medium heat. Add chicken; cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).

Stir in beans, corn and salsa. Heat to boiling. Reduce heat. Cover and simmer 3 to 5 minutes or until vegetables are hot. Serve with rice.

Total Cost $5.69

$5 Dinner Bargain Meal - Chili Dog Tacos

2 cans Nally's Chili ($1.72)
10  taco shells (Ortega $1.38)
10 hot dogs (Bar S $.88)
1/4 cup shredded cheddar cheese ($.78)
1/4 cup finely chopped onion (~$.25)

1 Heat chili.

2 Meanwhile, heat taco shells as directed on box.

3 In 10-inch nonstick skillet, cook hot dogs over medium-high heat 2 to 3 minutes, turning frequently, until browned.

4 Place hot dogs in taco shells; top each with chili, cheese and onion.

Total $5.01 for 10 tacos.  For a family of 4 having 2 tacos each with 2 left over for lunch. Add Rice A Roni for $.98; still keeping it $5.

Easy Chicken Taquito Casserole

Serves 6

1 (22.5 oz.) package José Olé® Chicken Taquitos, defrosted $4.64 (Use $2/1 coupon) = $2.64
1 (15 oz.) can refried beans (Rosarita $.82)
1 (16 oz.) jar thick and chunky style salsa (Pace $1.88)
1/2 cup taco sauce (Taco Bell $.32)
2 cups shredded mozzarella cheese OR shredded Mexican white cheese blend (Kraft $1.58)


Preheat oven to 350°F.

In a bowl, mix together until well-blended one can of refried beans and one 16 oz. jar of thick and chunky style salsa, set aside.

Divide. one 22.5-oz. box of José Olé® Chicken Taquitos into two equal parts. Spread 1/2 cup of taco sauce to evenly coat the bottom of an 8"x8" square baking dish. Over the taco sauce, line the bottom of the pan with half of the Chicken Taquitos, flattening each with your hands before you put it into the dish. Spread 1-1/2 cups of shredded cheese evenly over Taquitos. Spread 2 cups of the bean-salsa mixture over the cheese. Top the bean-salsa mixture with the remaining Chicken Taquitos again flattening them with your hands before you put them in the dish. Mix remaining 1/2 cup of cheese with 1/2 cup of the bean-salsa mixture and drizzle evenly over the Taquitos.

Reserve any remaining bean-salsa mixture for future use.

Bake casserole in a 350°F oven for 20-30 minutes until sides are bubbling and Taquitos are crisp at the edges.

Remove from oven and let cool. Serve with garnish of sour cream, guacamole, and shredded lettuce and tomato.

Total $7.24 = $4.82 for a family of 4 with two lunches for additional $2.41.

"Supreme Pizza" Pasta Bake
Serves about 8

INGREDIENTS:

½ lb. Italian Sausage $1.43
1 (6.4 ounce) package HY-TOP Lasagna Dinner Mix*
 *I couldn't find the dinner mix so I substituted use these instead: Ronzoni Lasagna noodles $1.62 and Prego Spaghetti sauce 26oz $1.48
3 ounces sliced Pepperoni (Hormel) $1.03
¼ cup chopped Green Bell Pepper ~$.20
¼ cup chopped Onion ~$.20
¼ cup HY-TOP Mushrooms $.23
2 tbsp. sliced HY-TOP Ripe Olives $.16
7 ½ cups Water, divided
8 ounces (2 cups) HY-TOP Shredded Mozzarella Cheese (Tillamook Shredded Cheese $1.78)

DIRECTIONS:
Preheat oven to 350°F. Crumble and brown Italian sausage in a 10" skillet. Drain off excess grease. Set aside. In a 3-quart pan, bring 6 cups of water to a boil. Stir in pasta. Cook 10 minutes. Drain. Place cooked pasta in a 9" x 13" baking dish.  Pour 1/2 spaghetti sauce over pasta. Distribute the Italian sausage, pepperoni, green bell pepper, onions, mushrooms and olives over the top of the pasta and sauce. Top with mozzarella cheese. Bake for 20 minutes.

Total Cost: $8.03 This would provide a family of 4 two meals, each meal being $4.01. You would have enough money to add a side dish of veggies or salad.

 Weight Watcher's General Tso's Chicken
(Serves 4 - 6pts per serving)
This is one of my favorite recipes, I add a little bit more pepper flakes to spice it up


Ingredients:
*most of these items you will have on hand

o 3/4 cup canned reduced-sodium chicken broth (Swanson's $.50)
o 2 tablespoons cornstarch (on hand)
o 2 tablespoons sugar (on hand)
o 2 tablespoons low sodium soy sauce (on hand)
o 1 tablespoon white wine vinegar (on hand)
o 1/2 teaspoon ground ginger (on hand)
o 2 teaspoons peanut oil ( I use Veg oil because I normally have that)
o 2 medium scallions, chopped ($.20)
o 2 medium garlic cloves, minced ($.05)
o 1/2 teaspoon red pepper flakes or 1 dried chilies, minced (on hand)
o 1 lb uncooked boneless skinless chicken breasts, cut into 2-inch pieces ($2.68)
o 2 cups cooked white rice, kept hot (~$.50)

Directions

1. In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.
2. Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.
3. Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
4. Serve chicken and sauce over rice. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.

Total: $3.93 if you have most of the items on hand. This dish is quick and easy.

Slow Cooker Cheesy Ravioli Casserole
(Serves 12)

1 tablespoon olive or vegetable oil (on hand)
1 medium onion, chopped (1/2 cup) ($.58)
1 large clove garlic, finely chopped ($.15)
1 can (26 ounces) four cheese-flavored spaghetti sauce (Hunts $.78)
1 can (15 ounces) tomato sauce (Hy-Top $.48)
1 teaspoon Italian seasoning (on hand)
2 packages (25 ounces each) frozen beef-filled ravioli (Rosetto $6.98)
2 cups shredded mozzarella cheese (8 ounces) (Tillamook $1.68)
1/4 cup chopped fresh parsley ($.24)

1. In 10-inch skillet, heat oil over medium heat. Cook onion and garlic in oil about 4 minutes, stirring occasionally, until onion is tender. Stir in spaghetti sauce, tomato sauce and Italian seasoning.
2. Place 1 cup of the sauce mixture in bottom of 5- to 6-quart slow cooker. Add 1 package frozen ravioli; top with 1 cup of the cheese. Top with remaining package of ravioli; top with remaining 1 cup cheese. Pour remaining sauce mixture over top.
3. Cover and cook on low heat setting 5 to 7 hours or until ravioli are tender. Sprinkle with parsley.

Total $10.89, which is 3 meals (freeze for other nights) for a family of 4 at $3.63.

Italian Hamburger with Spaghetti
(Serves 6)


Ingredients
* 1/3 cup dry bread crumbs
* 1/3 cup finely chopped onion
* 1/3 cup finely chopped green pepper
* 2 small garlic clove, minced
* 3/4 teaspoon dried oregano
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1 pound lean ground beef
* 1/3 cup grated Parmesan cheese, divided
* 24 oz spaghetti sauce
* teaspoon Italian seasoning (if you would like additional seasoning to your sauce)
* Hot cooked spaghetti, optional

Directions

* In a small bowl, combine the first seven ingredients. Crumble beef and sprinkle 3 tablespoons Parmesan cheese over mixture; mix well. Shape into six patties.
* In a large skillet, cook patties for 2 minutes on each side or until lightly browned. Combine the tomato sauce and Italian seasoning; pour over patties. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until meat is no longer pink. Sprinkle with remaining cheese. Serve patties and sauce over spaghetti if desired. Yield: 6 servings.

$5 Dinner Bargain Meals - Grilled Barbecued Bacon-Chicken Skewers

Grilled Barbecued Bacon-Chicken Skewers
(Makes 15 Skewers)

15 bamboo skewers (6 inch) ($.57)
3 large boneless skinless chicken breasts (about 1 lb) ($2.98)
4 large green onions ($.29)
1 package (2.1 oz) refrigerated fully cooked bacon (15 pieces) ($1.42)
1/2 cup barbecue sauce ($.32)

1. Soak skewers in water at least 30 minutes to prevent burning. Meanwhile, cut each chicken breast in half lengthwise, then cut crosswise to make 10 (about 1-inch) pieces. Cut onions into 2-inch pieces (30 pieces total). Cut bacon slices in half crosswise.

2. Heat gas or charcoal grill. Push 1 skewer through end of 1 bacon piece, then through middle of 1 chicken piece and back through other end of bacon piece; add 2 onion pieces, then repeat with another bacon piece and chicken piece. Place on large plate or tray. Repeat to make remaining kabobs.

3. Place kabobs on grill over medium heat. Cover grill; cook 5 minutes. Turn kabobs; brush with half of the barbecue sauce. Cover; cook 5 minutes. Turn kabobs; brush with remaining sauce. Cover; cook about 1 minute longer or until chicken is no longer pink in center. If desired, serve with additional barbecue sauce for dipping.

Enchilada Bake (serves 6)


12 corn tortillas (5 or 6 inches in diameter), torn into bite-size pieces ($.64)
2 cans (15 to 16 ounces each) chili beans in sauce, undrained ($1.50)
1 can (10 ounces) enchilada sauce (Hy-Top $.67)
1 1/2 cups shredded Monterey Jack cheese (6 ounces) ($.93)
3 medium green onions, sliced (3 tablespoons) ($.25)

1. Heat oven to 400°. Spray 2-quart casserole with cooking spray.
2. Place half of the tortilla pieces in casserole; top with 1 can of beans. Repeat layers. Pour enchilada sauce oven beans and tortilla pieces. Sprinkle with cheese and onions.
3. Bake uncovered about 20 minutes or until bubbly around edge.

Total $3.99 for a family of 4 with a little left over.

Quick Italian Chicken and Rice
(Serves 4)
Ingredients:
2 teaspoons vegetable oil (on hand)
1 lb of chicken breast sliced up ($2.68)
1/2 teaspoon Italian seasoning (on hand)
1 can (14.5 oz) Italian-style stewed tomatoes, undrained (S&W $.93)
3/4 cup water
1 1/2 cups uncooked instant white rice (~$.75)
Garlic Bread ($1.19)

1. In 10-inch nonstick skillet, heat oil over medium-high heat. Sprinkle chicken on all sides with Italian seasoning; add to skillet. Cook 5 to 6 minutes, stirring constantly, until chicken is browned and no longer pink in center.
2. Stir in tomatoes and water. Heat to boiling. Stir in rice. Cover; remove from heat. Let stand 5 minutes or until liquid is absorbed. Let stand 10 minutes or until liquid is absorbed.
3. Serve with Garlic Bread or salad

Spicy Egg Bake (Serves 8)

Ingredients

  • 1 tube (8 ounces) refrigerated crescent rolls ($1.32) use store brand or Pillsbury if you pick it up on sale.
  • 10 eggs $.91
  • 1/3 cup water
  • 3 tablespoons butter (on hand)
  • 1-1/2 cups prepared taco meat (~$1.00 use leftover taco meat for this)
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1 cup (4 ounces) shredded Monterey Jack cheese (Hy-Top Brand in bulk blocks $1.48 for both cheeses) We just use 2 cups of Colby Jack, which we keep on hand.
  • 1 cup salsa (Pace $.94)

Directions

  • Unroll crescent roll dough into a greased 13-in. x 9-in. baking dish. Seal seams and perforations; set aside.
  • In a small bowl, whisk eggs and water. In a large skillet, heat butter until hot. Add egg mixture; cook and stir over medium heat until eggs are almost set. Remove from the heat.
  • Sprinkle taco meat over dough. Layer with eggs, cheeses and salsa. Bake, uncovered, at 375° for 14-16 minutes or until bubbly and cheese is melted. Yield: 8 servings.
Total $5.65 for 8 servings.  This would be only $2.82 for a dinner of a family of four and then leftovers.

    Crunchy Chicken Nugget Tacos
    (Serves 4)
    Ingredients:

    12 Frozen breaded fully cooked chicken breast nuggets (Redi Serve in the deli section) $1.49 (this would be great meal if you have leftover chicken nuggets from a previous meal)
    1/4 cup creamy Caesar dressing $.25
    4 flour tortillas (8 to 10 inches in diameter) $.64
    2 cups shredded iceberg lettuce $.50
    1 medium tomato, cut into 8 slices $.35
    1/2 cup chow mein noodles $.25



    Bake nuggets as directed on package.

    Meanwhile, spread 1 tablespoon dressing over each tortilla; sprinkle each evenly with 1/2 cup lettuce. Arrange 2 tomato slices and 3 nuggets down center of each tortilla; sprinkle nuggets with 2 tablespoons chow mein noodles.

    Fold sides of tortillas over filling, slightly overlapping.

    Add additional ingredients if you prefer.

    Total $3.48.  This leaves room in your budget to add a watermelon slice for everyone or a side salad.  This is a great lunch.

    Saucy Ground Beef and Noodles
    Serves 4
    Ingredients:

    1 lb ground beef $1.98
    1 medium onion, chopped (1/2 cup) $.34
    1 medium bell pepper, chopped (1 cup) $.58
    3 cups uncooked extra-wide egg noodles (5 oz) $.58 (American Beauty)
    2 1/2 cups water
    1/2 teaspoon Italian seasoning $.05
    1 jar (1 lb 10 oz) tomato pasta sauce (any variety) or marinara sauce  $.98 Ragu
    1 jar (4.5 oz) sliced mushrooms, drained $.44 Hy-Top

    Directions:
    In 4-quart Dutch oven, cook beef, onion and bell pepper over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.

    Stir in remaining ingredients. Heat to boiling, stirring occasionally. Reduce heat; simmer uncovered 10 to 12 minutes or until noodles are tender.

    Total Price $4.95

    $5 Dinner Bargain Meals - Potato Soup

    Potato Soup from Cooks.com
    Ingredients:

    6 or 8 large potatoes $1.52
    4 carrots, diced $.35
    2 stalks of celery, diced $.20
    1 medium onion, diced $.52
    1 can mushroom soup $.97 (Campbell’s)
    water
    Salt and Pepper
    A little milk and corn starch to thicken

    Here are the directions, but I would prepare to throw everything in a crockpot:
    Peel, wash, and dice potatoes and put in large pan or stock pot. Add carrots, celery, and onion. Add water to vegetables just enough to cover them. Cook on medium heat until tender, salt and pepper to taste. Add mushroom soup. Add 2 cans of milk to vegetables and heat on medium, bring to a boil. When it comes to a boil, thicken mixture with a little milk and corn starch. Simmer for about 20 minutes.

    Total is $3.56 for a family of 4, now you can add some corn bread or salad along with this and still keep it a $5 meal.
