Quick Italian Chicken and Rice
2 teaspoons vegetable oil (on hand)
1 lb of chicken breast sliced up ($2.68)
1/2 teaspoon Italian seasoning (on hand)
1 can (14.5 oz) Italian-style stewed tomatoes, undrained (S&W $.93)
3/4 cup water
1 1/2 cups uncooked instant white rice (~$.75)
Garlic Bread ($1.19)
1. In 10-inch nonstick skillet, heat oil over medium-high heat. Sprinkle chicken on all sides with Italian seasoning; add to skillet. Cook 5 to 6 minutes, stirring constantly, until chicken is browned and no longer pink in center.
2. Stir in tomatoes and water. Heat to boiling. Stir in rice. Cover; remove from heat. Let stand 5 minutes or until liquid is absorbed. Let stand 10 minutes or until liquid is absorbed.
3. Serve with Garlic Bread or salad
